Cooking can provide many practical skills, such as reading, following directions, and measuring.  The pride and confidence that comes with mastering the finished product after cooking is even more meaningful.  The art of cooking can often be found as therapeutic for many.

Three Classic Shanghainese Home Dishes
 1) Wide String Beans with Potatoes 刀豆炒土豆
 Ingredients:
*  2 potatoes 土豆(馬鈴薯)
*  1 cup vegetable oil 菜油
*  1/2 pound wide string bean      刀豆
*  1/4 tsp soy sauce 生抽醬油
*  1/4 tsp brown braising sauce  紅燒汁醬油
*  1/4 tsp sweet bean sauce         甜麵醬
*  1/3 cup water 水

 

 2) Fried Chinese yam 炒山藥
 Ingredients:
*  1 Chinese yam 山藥
*  1 egg 雞蛋
*  4 sticks celery 芹菜
*  4 black fungus 黑木耳
*  1/2 cup sliced pork 瘦肉片
*  1/2 tsp goji berries 枸杞子
*  1/2 cup chicken broth 雞湯
*  1/2 tsp cornstarch 太白粉
*  1/2 cup avocado oil 酪梨油
*  1/3 tsp salt 鹽
*  1/4 tsp pepper 胡椒粉

 

 3) Braised squid and glutinous rice 紅燒魷魚糯米飯
Ingredients:
*  2 squid 魷魚
*  1 cup glutinous rice 糯米
*  1 ginger 薑
*  2 scallions 蔥
*  1/2 cup avocado oil 酪梨油
*  1/2 tsp casserole soy sauce     煲仔飯醬油
*  1/2 tsp hoisin sauce 海鮮醬
*  1/3 tsp white pepper 白胡椒
*  1/3 cup corn kernels 玉米粒
*  1/3 cup green beans and diced carrots 青豆和胡蘿蔔丁
*  1/3 tsp cooking wine 料酒
